Chirer Pulao

This one I learned from my mother. This is a very easy to cook and healthy snack. Go through this post to know how it is cooked.

Chirer Pulao

  • Ingredients :
  1. Beaten rice ( Chire/Poha) – 100 g
  2. Onion – 1 (medium). If you want to make it a complete vegetarian dish then you may skip onion
  3. Ginger – 2 teaspoon(minced)
  4. Raisin – one fistful
  5. Cashew nuts – one fistful
  6. Peas – one fistful
  7. Almond – one fistful
  8. Carrot (cut into julienne)  –  one fistful
  9. Capsicum (cut into small thin stripes) – one fistful
  10. Green Chili – 2 (cut into ringlets)
  11. Sugar – 1 1/2 tablespoon
  12. salt – 2 1/2 teaspoon
  13. Garam Masala – 1 teaspoon
  14. White oil – 1 tablespoon
  15. Ghee (clarified butter) – 1 teaspoon. This item is optional
  • Preparation :
  1. Wash beaten rice(chire/poha) with water and make it soft. But don’t make it too soft that it starts to disintegrate
  2. Heat oil in a frying pan. Throw in onion pieces and fry well till they turn pink
  3. Add minced ginger and the rest of the vegetables ( carrot and capsicum) and toss well
  4. Add salt and sugar and cook for 2-3 minutes
  5. Add the soft beaten rice(chire/poha) and mix well
  6. Add raisins, cashew nuts, almonds, green chili, peas and cook for a minute
  7. Add garam masala and mix well
  8. You can add a teaspoon of ghee for the scent, but this is optional
  9. Remove from heat and Chirer Pulao is ready to be served

  2. hi payal, have u heard of jhinger bora (gouard fry), used to be my favourite in school time, can u tell me the recipe

    • Hi..Sorry for the late reply. For the “Jhinger Bora” what you can do :
      1. Wash and scrap the skin of gourd and cut into small pieces
      2. Finely chop onion
      3. Chop green chili
      6. Now take bengal gram(besan) and mix water and salt in it. Make such a paste that is not too watery or too hard like a dough
      7. Add the finely chopped gourd and onion and green chili in the paste. Add a little water if needed to bind the mixture. Make sure to keep the onion and gourd to stick to each other
      8. Heat oil in a pan for deep frying
      9. Take a dollop of the mixture in your hand and put it in the oil. Repeat it for the rest of the mixture
      10. Fry in a medium heat so that the gourd and the onion pieces are crisp from within
      11. When the color of them changes to golden yellow or brown remove from heat
